How to make chocolate and coffee from lime fruits
Just as a coffee substitute can be made from chicory flowers (roots), a chocolate and coffee substitute can be made from the flowers (fruits) of the linden tree in a similar way.

After the linden flowers bloom, fruits (achenes) are formed. These are the small green balls. You need to pick them at the right time at the turn of June and July. Balls that are too young and small do not yet contain any pulp. On the other hand, balls that are too overripe have a too hard or woody shell. The best time to pick them is when the balls are still green and soft on the outside, with white pulp inside. They should taste like young green peas.

We pluck the green balls and remove their stems. We spread them fresh on a baking sheet and bake in the oven for 45 minutes at a temperature of 180°C.

Grind or blend the browned balls into a powder. Sieve to separate the fine powder from the coarse skins. From one small bowl of green fruits, which is about 50g, we get 10g of sifted brown powder.

Recipe:
10 g sifted brown powder
5 g sugar (honey)
20 g coconut oil (butter)

First melt the fat or butter, then add the sweetener and brown powder. Pour the mixture into molds and let it set in the refrigerator for a few hours.

The resulting product has a consistency reminiscent of poppy seed candy. It tastes like peanut butter coffee. It smells like roasted nuts with coffee. The coarse husks from the sieving can be poured with hot water, which gives us a decaffeinated dark drink with a coffee-like aroma. This drink tastes like melta.
